Valdibella pasta was born in Sicily, from the ancient grain Timilìa (or Tumminia), for century it has been considered “the grain of the farmers”, because being a late grain, it has been planted after the fields of the owners were already worked and therefore it was destined for the family pantry.
In the field it’s a real strenght: it overcomes well the period of drought and it resists very well to the infestants. Being an ancient grain, it is not genetically modified and to grow it there are no needed neither concimes nor disherbants.
Pasta is dried at low temperatures in long periods, to maintain all the nutritivies principles and the organoleptic contents.
