From the small stigmas of the Crocus sativus, the precious spice originating in the Mediterranean area and Asia Minor is obtained.
It blooms only in a very short span of time, fifteen, at most twenty days a year when the delicate flowers are collected every morning at dawn.
After the separation of the stigmas, they are dried at a controlled temperature, and a few hours after collection they are stored in the jars, so as to best preserve their aroma.
It takes about 120 flowers to obtain a gram of saffron: a meticulous and accurate work that allows us to obtain such a precious spice.
