“Vialone Nano” rice is a variety of italian rice, typical of low veronese zone.
It’s considered as a “half-fine” rice, it has a short and roundy grain. It’s an IGP product and it’s considered the head master of rices for risotto, the most fine italin production.
Among of the types of fine rices it is maybe the most versitile and it adapts to many different productions, it stays together during cooking and it has a great capacity of grow and absortion: for this reason is particularly indicated for smooth risotti, softs and mantecated (for example with meat or pumpkin).

Whole rice preserves all the nutritive “positive” properties of rice, taken away only the zest, the grain is rich in fibers, vitamins and mineral salts.
Whole rice has therefore high nutritive “authentic”values. The time of cooking is longer.
