Red bean release during cooking part of the pigments and at the end of the cooking the soup is ambered coloured, the cooking enhances the sapidity of these legumes and the smooth and soft consistency of the dish.
Recommended aromatic herbs and spices, which help to contain the use of salt or even to substitute it.
The soup is ideal also for mixes with dry tomato, pieces of meat and sausage, but also blu fish, salmon and tuna.
