“Carnaroli” rice is a variety of italian rice, native and typical of Pavia and Vercelli zone.
Called “the king of rices” for its spread it’s considered as a “long” rice and it was born from a mix of two varieties of rice: Vialone and Leoncino.
It has a long grain, big and elongated. It has a small grade of collosity, an excellent grade of absortion, and it’s extremely resistent at cook, after which it results well grained.
It adapts very well for rice salads, risotto with vegetables and risotto with fish.

Whole rice preserves all the nutritive “positive” properties of rice, taken away only the zest, the grain is rich in fibers, vitamins and mineral salts.
Whole rice has therefore high nutritive “authentic”values. The time of cooking is longer.
