Gentili pears or San Giovanni Pears (because they ripen during the period of the Saint holiday, that is the end of June) are an ancient variety spread in Tuscany and in Sicily.
Their sweetness matchs really well with the notes of licorice, root with many beneficial properties, for an healthy and interesting jam.
